A Bordeaux winemaker found himself in court last week, accused of illegally using oenological charcoal, also known as activated carbon, to remove unpleasant flavors from his red wine. The winemaker, whose name was withheld from reports by local newspaper Sud Ouest, was found guilty of using the charcoal to correct faults in wine grown in the Bordeaux appellation of Lussac-St.-Émilion in 2007.
