AT THE FIRST Easter lunch I hosted, I cooked the coulibiac of salmon from the brand-new "Chez Panisse Menu Cookbook" by Alice Waters. It was 1983 and I was in college. No one I knew, not even people who had actually graduated from college and ventured out into the wider world, had ever heard of the stuff in that book.
